Cucumbers & Onions

I grew up with this combination made by my mother and honestly I cannot duplicate hers. Hers are far to good but not the healthiest so I treat them like a special treat when she makes them for us. I started making these recently with all the cucumbers my mom has been gifting me from her garden. A simple recipe but delightful with the findings in the garden that is for sure. Feel free to make a huge batch like I did!

What you need~
4-5 cucumbers sliced
2 red onions sliced
Apple cider vinegar
Salt
Water
Ponzu
Everything seasoning


Start by dicing up the cucumbers and onions and placing in a large bowl. Pour some salt over them a dash of the vinegar and then fill the bowl with water. You can use as much salt as you want I just dump a bunch(1/4 cup maybe) in and cover them with water since you will drain. Place in the fridge over night. In the AM drain all water off of the veggies. I then toss with the Ponzu and everything seasoning. You can eat right away or store it gets better the longer it sits. It becomes pickled almost.

This is a yummy easy recipe and you can really sub out a ton of stuff. Do not have ponzu? Use soy sauce and lime juice which is what it tastes like. No everything seasoning use sesame seeds (black) and Mrs. Dash, Nature's whatever you got.

Foxy Pedaler

A little ray of fun in a hard month. I have not posted anything in a while and that is because my grandfather passed away. One of the giants in my life in many more ways that one that was a hard time recently to have to work through. This caused me to not really cook or travel. This past Sunday for my friend Katelyn's birthday we did this bike tour on the foxy pedaler and we had a blast. I will pre-warn you it caused my back injury to flair up and I am still recovering from that. Still worth it though we had a really good afternoon. Some hightlights below. We decided on two stops and the biking tour took about 2 hours. We also had a 90's theme!

The weather was nice, we had many laughs, 90's music (our theme of the party) was blasting and it was great to celebrate something happy for once. Happy Birthday to Katelyn!

YELP: Food Photography 101

Well that was cool! I not only learned a lot but this event was a delightful break from the real world for a minute. I went and bought an expensive phone last year because it has three camera lens and takes insanely good pictures. Which has honestly up'd my photo game for sure but I was hoping to learn some things and boy I did. I learned about lighting, focal points and settings on my phone. It was a class well worth it. Michelle was a great teacher and the Bottle Room an awesome hosting event. I already started using these tips last night at a baseball work outing. Here are some of my photos I took during the event. I dear you to not droll everywhere!
