Minestrone Soup

I am so glad I made this soup this week. With Ryan being sick something packed with this many veggies is good for him. This soup has a ton of vegetables in it. I was rather happy with how it turned out in the end and we have lunches all week now.


What you will need~
Cannellii beans drained & rinsed, 1 can     
Carrots diced, 2 cups
Celery diced, 1.5 cups
Garlic diced, 4 cloves
Green beans drained & rinsed, 1 can
Kidney beans drained & rinsed, 1 can
Potatoes diced, 2
White onion diced, 1
Zucchini diced, 2
Veg stock, 4 cups
Seasoning (Mrs. Dash), 1 tbsp
Pepper, 1/2 tsp
Salt, 1 tsp
Water, 2 cups
Pasta ,1 cup
V8, 1 can
Tomato juice, 3 cups
Bay leaf, 2












Once you have prepped all your ingredients add the tomatoes, carrots, potatoes, celery, white onion, garlic, seasoning, pepper, salt and bay leaves into the crock pot. Add in your veggie stock, water, V8 and tomato juice. Cover and cook on low for 8 hours.














15 minutes before you want to eat add in the kidney beans, cannellii beans, zucchini, green beans and pasta. Turn to high and cook for 10-15 minutes until your pasta is tender.

Adding in the extras at the end!

Done and it looks so tasty.

Passed the taste test!
This made an almost overflowing crockpot full of soup and it warms up really well for leftovers. I picked up some lovely bread to eat with it from Breadsmith. I will be making this again in the future for sure.
